Biltong

Biltong traces its roots back to the 17th-century Dutch and Flemish settlers who established themselves at the Cape. They brought traditional European meat-preservation techniques—salting, seasoning and drying—and adapted them to local conditions. South Africa’s warm, dry climate made air-drying highly effective. Ingredients such as vinegar, coriander and pepper soon became staples of the recipe.

The name “biltong” comes from Dutch/Afrikaans: “bil” (hindquarter of the animal) and “tong” (strip). During long journeys, treks and later the northward Great Trek, biltong served as an essential, long-lasting protein source. Although biltong is now enjoyed worldwide, its historical foundation lies in Dutch preservation traditions that further evolved in South Africa.

Biltong vs. Beef Jerky

Biltong and beef jerky are similar in that both are dried beef products, but their production methods and final flavours differ clearly. Biltong is traditionally made in South Africa by slowly air-drying thick strips of meat after marinating them in vinegar, salt and spices such as coriander and black pepper. This results in meat that is more tender, fuller in flavour and often cut thicker.

Beef jerky, on the other hand, originates mainly from the United States and is made from thinner slices of meat, usually marinated in a sweeter mixture (such as sugar or soy sauce) and then dried or heated at relatively high temperatures. The result is generally drier, tougher and sweeter, whereas biltong remains softer, more savoury and more aromatic.

Grass-Fed: What Are the Benefits?

Grass-fed animals eat natural forage, receive all the movement they need and are raised without chemical agents. As a result, their meat has a higher nutrient density. It typically contains more protein, conjugated linoleic acid (CLA), vitamins B2, E and K2, beta-carotene (a vitamin-A precursor), more omega-3 fatty acids, and higher levels of minerals such as zinc, iron, sodium, potassium and phosphorus.
